Caldereta

Traditional Filipino caldereta recipe

Ingredients

  • 625 g Beef
  • 0.62 cup Tomato Sauce
  • 2.5 pieces Potatoes
  • 2.5 pieces Carrots
  • 1.25 piece Bell Pepper
  • 2.5 pieces Onions
  • 6.25 cloves Garlic
  • 6.25 pieces Bell Peppers
  • 0.62 cup Cheddar
  • 0.62 cup Milk
  • 1.25 can Sardines

Instructions

  1. Season the beef cubes with salt and pepper. Heat oil in a large pot over medium-high heat and brown the beef on all sides.

  2. Add the garlic and onions, sauté until softened and fragrant.

  3. Pour in the tomato sauce and enough water to cover the beef. Add bay leaves if desired. Bring to a boil, then reduce to low and simmer covered for 1 hour until the beef is tender.

  4. Add the cubed potatoes and carrot chunks. Simmer for 15 minutes until the potatoes cook through.

  5. Stir in the bell peppers and canned sardines. Simmer for 5 more minutes.

  6. Pour in the milk and simmer for 2 minutes. Do not let it boil vigorously to prevent curdling.

  7. Add the shredded cheddar cheese and stir until melted and creamy. Season to taste and serve hot with steamed rice.
