BBQ Chicken with Java Rice

Traditional Filipino bbq chicken with java rice recipe

Ingredients

  • 1125 g Chicken
  • 3.38 cups Java Rice
  • 6.75 tbsp Soy Sauce
  • 9 pieces Calamansi
  • 11.25 cloves Garlic
  • 4.5 tbsp Brown Sugar
  • 4.5 tbsp Cooking Oil

Instructions

  1. Cut the chicken into serving pieces. In a bowl, mix the soy sauce, calamansi juice, minced garlic, brown sugar, and a pinch of black pepper to make the marinade.

  2. Coat the chicken in the marinade and let it sit for at least 30 minutes.

  3. Place the marinated chicken in a pan over medium heat with the marinade. Cover and cook for 10 minutes.

  4. Uncover and turn the chicken pieces, spooning the sauce over them. Cook for another 10 minutes, turning occasionally, until the chicken is cooked through and the sauce has caramelized to a sticky glaze.

  5. Meanwhile, cook the java rice according to package directions.

  6. Brush the chicken with the remaining sauce for a glossy finish.

  7. Serve the glazed BBQ chicken alongside the steamed java rice.
