Ube Mamon

Ube Mamon are soft bites of heaven! Moist, fluffy, and delightfully flavored with ube, these mini sponge cakes make the perfect snack or dessert.

Ingredients

  • 2 cup flour
  • 1 tbsp baking powder
  • 8 large eggs, egg yolks and egg whites separated
  • 1 cup sugar
  • 0.5 cup milk
  • 6 tbsp oil
  • 4 tsp Ube flavoring
  • 0.5 tsp cream of tartar

Instructions

  1. Preheat the oven to the specified temperature and prepare your baking pan.

  2. Cream the butter and sugar together, then beat in the eggs.

  3. Fold in the flour and dry ingredients alternately with any liquid ingredients.

  4. Pour or spread the batter into the prepared pan.

  5. Bake it until a toothpick comes out clean when you poke the center.

  6. Cool in the pan before removing.
