Tortang Talong at Manok

Grilled eggplant topped with shredded chicken and egg.

Ingredients

  • 2 pcs Eggplant, whole
  • 200 g Chicken breast, shredded
  • 4 pcs Eggs, beaten
  • 1 pcs Onion, chopped
  • 1 pcs Tomatoes, chopped
  • 1 tbsp Fish sauce
  • 2 pcs Garlic, minced
  • 2 tbsp oil

Instructions

  1. Grill eggplant until charred. Peel and flatten.

  2. Sauté garlic, onion until they soften and smell nice.

  3. Beat eggs and dip flattened eggplant into the mixture.

  4. Pan-fry until golden, top with chicken mixture.
