Sinigang na Baboy

Classic Filipino sour soup with pork belly on a tamarind broth. Packed with radish, okra, taro, spinach, and tomatoes.

Ingredients

  • 480 g Pork belly, bone-in
  • 160 g Radish (daikon), sliced
  • 120 g Green papaya, sliced
  • 1.6 pcs Tomatoes, halved
  • 80 g Okra
  • 120 g Taro leaves (kale), chopped
  • 24 g Malunggay leaves
  • 0.8 pcs Siling haba
  • 60 g Tamarind pods or sinigang mix
  • 1.6 pcs Onion, quartered
  • 3.2 pcs Garlic, minced
  • 0.8 tbsp Fish sauce (patis)

Instructions

  1. Blanch the pork in boiling water for 5 minutes. Drain and rinse, discard the water.

  2. In a pot, sauté onion and garlic. Add the pork, cover with 4 cups water. Bring to a boil and skim foam.

  3. Add radish and papaya. Simmer for 30 minutes until pork is tender.

  4. Add tomatoes, okra, taro leaves, and sinigang mix. Simmer 15 more minutes until vegetables are cooked.

  5. Stir in malunggay leaves and fish sauce. Let cook 2 more minutes. Serve hot.
