Lo Mein

This homemade lo mein is a quick stir fry of egg noodles, crisp vegetables, and a savory sauce made with soy sauce, oyster sauce, and chicken stock. Everything comes together in a wok in under 20 minutes.

Ingredients

  • 8 oz dried egg noodles (cooked according to package instructions)
  • 15 piece snow peas
  • 3.25 cup carrots (julienned)
  • 1 piece small red bell pepper (julienned)
  • 1 cup fresh white mushrooms (sliced)
  • 1.5 cup chicken stock
  • 3 cup fresh spinach
  • 1 piece small yellow onion (sliced)
  • 1 tbsp oyster sauce
  • 3 tbsp light soy sauce
  • 0 salt and pepper to taste
  • 3 tbsp oil

Instructions

  1. Heat the cooking oil in a wok over medium heat.

  2. Sauté the onion until it softens. Add the bell pepper, mushrooms, snow peas, and carrots. Stir fry for about 2 minutes, just until the vegetables are slightly tender but still crisp.

  3. Add the cooked egg noodles. Toss well and cook for 3 minutes.

  4. Pour in the soy sauce, chicken stock, and oyster sauce. Toss everything together and continue cooking for 3 to 5 minutes, allowing the noodles to absorb the sauce.

  5. Add the spinach, then season with salt and pepper. Toss again and cook for 1 to 3 minutes, just until the spinach wilts.

  6. Transfer to a serving plate and serve hot. Share and enjoy!
