Seared Okra and Tomato

Seared Okra and Tomato — fresh vegetables prepared Filipino-style with garlic and shrimp paste. A light and flavorful side dish.

Ingredients

  • 15 piece okra (sliced crosswise)
  • 2 medium tomato (cubed)
  • 2 tsp garlic powder
  • salt and pepper to taste
  • 2 tbsp oil

Instructions

  1. Arrange sliced okra in a bowl. Add vinegar. Toss until coated.

  2. Bring to a simmer a pan or a skillet. Pour cooking oil.

  3. Add okra when the oil is hot. Sear one side for 30 seconds. Stir and continue to cook the opposite side for another 30 seconds.

  4. Add tomatoes. Stir and cook for 5 to 7 minutes in medium heat while stirring every minute.

  5. Season with salt and ground black pepper.

  6. Transfer to a serving plate. Serve.
