Sayote Guisado with Chicken and Shrimp

Ingredients

  • 1 large arge chayote (sayote, cored and sliced)
  • 6 oz boneless chicken breast (thinly sliced)
  • 10 piece medium shrimp (deveined, shell and head removed)
  • 5 clove garlic (crushed)
  • 1 medium yellow onion (sliced)
  • 2 cup chicken broth
  • 0 Salt and pepper to taste
  • 3 tbsp oil

Instructions

  1. Heat the cooking oil in a pan.

  2. Saute the garlic and onion until the onion is soft.

  3. Add the chicken slices. Cook for 2 minutes.

  4. Pour-in 1 cup of chicken broth. Cover and let boil. Simmer for 15 minutes.

  5. At this point, the liquid should have been reduced to more than half. Put-in the chayote. Cook for 2 minutes.

  6. Add the shrimp. Cook for 1 minute.

  7. Pour-in the remaining chicken broth. Let boil and cook for 1 to 2 minutes.

  8. Add salt and pepper to taste.

  9. Transfer to a serving bowl. Serve.
