Pork Menudo
Filipino pork menudo recipe
Instructions
Season the pork shoulder cubes with salt and pepper. Heat olive oil in a large pot over medium-high heat and brown the pork on all sides.
Reduce heat to medium. Add the garlic and onions, sauté until softened and fragrant.
Pour in the tomato sauce and enough water to just cover the meat. Add the bay leaves and bring to a simmer. Cover and cook for 45 minutes until the pork is tender.
Add the potatoes and carrots. Cook for 15 minutes until they are fork-tender.
Stir in the green beans and bell peppers. Cook uncovered for 10 more minutes until all vegetables are cooked and the sauce has thickened.
Taste and adjust seasoning with salt and pepper. Serve hot with steamed rice.
