Traditional Filipino pancit recipe
Instructions
Cook the rice noodles briefly until just softened, then drain and set aside.
Heat oil in a large wok over high heat. Sauté the garlic and onions until fragrant.
Add the chicken and pork, stir-fry for 3–4 minutes until browned and cooked through.
Add the sliced carrots and shrimp. Cook for 2 minutes until the carrots begin to soften.
Season with soy sauce and fish sauce. Stir in the cooked rice noodles and toss well.
Add the bean sprouts last and stir-fry for 1 minute until the noodles are well combined with the sauce.
Toss everything together over high heat for the final minute. Serve hot garnished with green onions and a squeeze of calamansi.
