Monggo with Chicharon

Mung bean stew with crispy pork cracklings and vegetables.

Ingredients

  • 250 g Mung beans (monggo)
  • 1 cup Pork cracklings (chicharon)
  • 1 pcs Tomatoes, chopped
  • 0.5 pcs Onion, chopped
  • 2 pcs Garlic, minced
  • 1 cup Squash (kalabasa)
  • 0.5 bunch Spinach (kangkong)
  • 1 tbsp Fish sauce
  • 1 tbsp oil

Instructions

  1. Soak mung beans for 2 hours, then boil in 6 cups water until soft, about 40 minutes.

  2. Sauté garlic, onion until they soften and smell nice.

  3. Add squash, fish sauce, and pour over cooked monggo.

  4. Simmer 10 more minutes. Top with chicharon and kangkong before serving.
