Mock Pancit Canton Stir-Fry

Mock Pancit Canton Stir-fry is a delicious way to turn instant ramen noodles into a hearty and tasty meal. Chock full of shrimp, chicken, and veggies, it's an easy weeknight dinner the whole family will love!

Ingredients

  • 2 packs Lucky Me Instant Pancit Canton or Indomie instant ramen noodles
  • 1 tbsp canola oil
  • 1 onion, peeled and chopped
  • 0.25 lb boneless chicken breast, sliced thinly
  • 2 piece Chinese sausage, sliced thin in a bias
  • 0.25 lb shrimp, peeled and deveined
  • 1 large carrot, peeled and julienned
  • 1 head broccoli, cut into florets
  • 0 fried garlic bits
  • 0 green onions, chopped
  • 0 calamansi, halved

Instructions

  1. In a sauce pot on medium heat, cook instant noodles according to package directions. Drain it well, reserving about ¼ cup of the liquid.

  2. Add seasoning packet to the drained noodles and toss to fully coat.

  3. Set a large pan - medium heat, heat canola oil. Add onions and Cook it until softened.

  4. Add chicken and cook, stirring them around until it gets lightly browned.

  5. Add Chinese sausage and cook, stirring them around, until it gets lightly browned.

  6. Add shrimp and Cook it until color changes to pink.

  7. Add broccoli.

  8. Add reserved liquid and Keep cooking, stirring them around, until broccoli florets are tender yet crisp and liquid is absorbed.

  9. Add carrots and Cook it until tender-crisp.

  10. Add instant noodles and Keep cooking, tossing to combine, until heated through.

  11. To serve, Transfer it to serving plate and garnish with fried garlic bits, green onions, and calamansi, if desired. Serve while hot.
