Mango Bread Loaf

Mango bread loaf is the best use for this season's mangoes! Soft and moist, and bursting with bright mango and warm cinnamon flavors, it makes a delicious breakfast or midday snack.

Ingredients

  • 2 cup flour
  • 1 cup sugar
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup oil
  • 2 eggs
  • 3 Manila mangoes (about 2 ½ cups), peeled and chopped
  • 0.5 cup raisins
  • 1 tbsp lemon juice
  • 1 x 5 Loaf Pan
  • 0 Grease a 9 x 5 loaf pan and set aside

Instructions

  1. Preheat oven to 350 F.

  2. Grease a 9 x 5 loaf pan.

  3. Mix flour, sugar, ground cinnamon, baking soda, and salt. Whisk together until well-distributed.

  4. Mix oil and eggs. Beat until well-blended and add to flour mixture.

  5. Drop in mangoes, raisins, and lemon juice. Give it a good mix.

  6. Pour mixture into the prepared loaf pan and bake in the preheated oven for about 50 minutes to 1 hour or until a toothpick inserted in the middle comes out clean.

  7. Remove from oven and allow to cool before slicing.
