Macaroni Salad

Elbow macaroni is tossed in a creamy Lady's Choice mayonnaise dressing with shredded boiled chicken, sweet pickle relish, grated cheddar cheese, raisins, pineapple tidbits, and minced bell peppers for a classic cold pasta salad.

Ingredients

  • 1 large b. elbow macaroni
  • 1.5 cup Lady’s Choice Mayonnaise
  • 226.8 g (8 oz) chicken breast ((note 1))
  • 0.75 cup shredded cheese ((note 2))
  • 5 tbsp sweet pickle relish
  • 0.25 cup carrot (minced)
  • 0.5 cup raisins
  • 8 oz. pineapple tidbits ((note 3))
  • 1 red bell pepper (minced)
  • 1 g reen bell pepper (minced)
  • Salt to taste

Instructions

  1. Cook the macaroni based on the package instructions. Set aside.

  2. Boil the chicken breast for 15 minutes. Let it cool down and the shred it into pieces.

  3. Mix together cooked macaroni, shredded chicken, Lady’s Choice Mayonnaise, and all other ingredients in a large bowl. Toss until well blended.

  4. Season with salt. Refrigerate for at least 2 hours before serving.

  5. Serve.
