Lechon Mano-Mano

Cebu's famous whole roasted pig — tender, crispy-skinned, stuffed with aromatics. The most prized delicacy of the Visayas.

Ingredients

  • 2200 g Whole pig or pork shoulder
  • 220 ml Salabat paste (lemongrass, vinegar, peppercorns)
  • 4.4 tbsp Salt, coarse
  • 6.6 pcs Lemongrass stalks
  • 110 g Ginger, sliced
  • 4.4 pcs Limes or calamansi
  • 2.2 pcs Banana stalk
  • 4.4 sheets Banana leaves
  • 220 g Vegetable peels (for stuffing)

Instructions

  1. Rub the pig liberally with coarse salt. Let it dry for 30 minutes.

  2. Stuff the cavity with lemongrass, ginger, and banana stalk. Truss with string.

  3. Roast on a rack over charcoal for 4-6 hours, basting with salabat paste every 30 minutes.

  4. The skin should be crispy and the meat falls from the bones. Serve with atsara (pickled papaya).
