Kake Udon

Warm yourself with a bowl of steaming hot bowl of Kake Udon. This Japanese dish is simple yet packed with flavor and is satisfyingly delicious! From the thick, chewy noodles to the rich and savory broth, it is comfort food at its finest!

Ingredients

  • 4 cup dashi
  • 2 tbsp soy sauce
  • 2 tbsp mirin
  • 2 tbsp sake
  • 0 salt
  • 2 packs (7 ounces each) fresh udon noodles
  • 0 green onions, chopped
  • 0 shichimi togarashi (Japanese 7-spice)
  • 0 grated ginger (optional)

Instructions

  1. Prepare udon according to package directions and Drain it well.

  2. Rinse under cold running water to remove excess starch. Then run under hot water to warm up.

  3. In a pot, combine dashi, soy sauce, mirin, sake, and salt. Get it boiling and reduce to a simmer for about 3 minutes.

  4. Place udon in bowls and ladle the broth.

  5. Top with spring onions, shichimi togarashi, and grated ginger, if desired. Serve while hot.
