Kabocha Salad
Kabocha Salad is made with kalabasa squash, carrots, and raisins tossed in mayo and topped with chopped walnuts. Creamy with a hint of sweetness, it's the perfect side dish for your favorite Asian meals.
Instructions
Wash and prepare all the vegetables — slice, chop, or tear as needed.
In a bowl, whisk together the vinegar, fish sauce, sugar, and chopped garlic to make the dressing.
Toss the vegetables with the dressing until everything is well coated.
Arrange on a serving plate and garnish with lime wedges on the side.
