Kabocha Salad

Kabocha Salad is made with kalabasa squash, carrots, and raisins tossed in mayo and topped with chopped walnuts. Creamy with a hint of sweetness, it's the perfect side dish for your favorite Asian meals.

Ingredients

  • 1 (2 to 3 pounds) kabocha (kalabasa)
  • 1 large carrot, peeled and shredded
  • 2 tbsp green onions, chopped
  • 2 tbsp raisins
  • 0.25 cup mayonnaise
  • 0 salt and pepper to taste
  • 2 tbsp chopped walnuts

Instructions

  1. Wash and prepare all the vegetables — slice, chop, or tear as needed.

  2. In a bowl, whisk together the vinegar, fish sauce, sugar, and chopped garlic to make the dressing.

  3. Toss the vegetables with the dressing until everything is well coated.

  4. Arrange on a serving plate and garnish with lime wedges on the side.
