Pro Tips

**Chef's Tips & Troubleshooting:**

- Let the dough rise in a warm, draft-free spot until it doubles in size for the fluffiest texture.

- Brush the tops with butter or egg wash before baking for a golden, glossy crust.

- Use bone-in, skin-on chicken pieces for stews — they stay juicier and add more flavor to the broth.

- Cook chicken until the internal temperature reaches 165°F at the thickest part of the breast.

Cooking Tips

For maximum flavor, season the chicken at least 30 minutes before cooking — ideally overnight in the refrigerator. This allows the marinade to penetrate beyond the surface. Use a meat thermometer to check doneness: 165°F (74°C) at the thickest part of the breast, away from the bone. Have all your ingredients prepped and measured before you start cooking — quick dishes leave no time for chopping mid-recipe.

Ingredient Substitutions

Chicken alternatives: Pork shoulder or boneless thigh meat can substitute for chicken in stews. For lighter fare, extra-firm tofu or seitan works in stir-fries and braises. Short on time? A pressure cooker (Instant Pot) can reduce cooking time by roughly half for most braised and stewed Filipino dishes. Reduce liquid slightly since less evaporates.

Storage & Reheating

Store in an airtight container in the refrigerator for up to 3–4 days. The flavors often deepen overnight, making leftovers even more delicious. Reheat on the stovetop over medium-low heat, adding a splash of water or broth if the sauce has thickened during storage. Microwave in 30-second bursts, stirring between each.

Prep: 10 min Cook: 15 min Total: 25 min Medium Serves 4

Instructions

  1. Start making the idol bites by preparing the dough. Combine flour, evaporated milk, and salt in a bowl. Mix well and set aside. On another bowl, combine milk, canola oil, and egg. Mix well until all the ingredients are well blended. Combine the dry and wet ingredients. Knead the dough until it is smooth and elastic. Mold into a ball figure. Cover and let it rest for 15 minutes.
  2. Divide the dough into 2 parts to make it easier to flatten. Use a rolling pin to flatten the dough and then slice it into small triangles.
  3. Wrap 2 triangular dough near the two sides of each piece of CDO Idol Cheese Dog. Do this step until all cheese dogs are done.
  4. Make an egg wash by mixing the egg wash ingredients. Brush it over the wrapped dough.
  5. Bake for 12 to 15 minutes at 190C or air fry at 180C for 8 minutes. Slice in half and arrange on a serving plate. Serve.
  6. Prepare the Idol Cheese Dog Bread Roll. Flatten each slice of bread using a rolling pin. Spread mayonnaise on one side. Wrap the bread around each CDO Idol Cheese Dog. Secure with a toothpick.
  7. Heat the oil in a small cooking pot.
  8. While the oil is heating up. Dip the wrapped cheese dog in beaten egg and then roll it over the Panko breadcrumbs until it gets completely coated. Deep fry until the breading turns golden brown. Slice into half and arrange on a serving plate.
