Ginisang Sitaw with Carrot and Bell Pepper

Sitaw stir-fried with pork belly and red bell peppers in a savory soy and oyster sauce blend, simmered with a touch of sweetness. Served with steamed rice.

Ingredients

  • 18 piece string beans (cut into 2-inch pieces)
  • 0.5 lb pork belly (sliced)
  • 1 red bell pepper (sliced into strips)
  • 2 piece tomatoes (chopped)
  • 1 yellow onion (sliced)
  • 5 clove garlic (chopped)
  • 3 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 7.5 oz Coca-Cola
  • 1 cup water (divided)
  • 0.5 tsp sugar
  • 0 Salt and ground black pepper (to taste)

Instructions

  1. Heat a wok over medium heat. Add the pork belly and cook until the fat renders and the meat starts to brown.

  2. Add the chopped garlic and sauté for about 1 minute until fragrant.

  3. Pour in the soy sauce and ¾ cup of water, and coca cola. Cover the wok and let the pork simmer until tender.

  4. Remove the lid and allow the remaining liquid to evaporate completely.

  5. Stir in the onions and tomatoes. Cook until softened.

  6. Add the string beans and sauté for 1 minute.

  7. Pour in the oyster sauce and remaining ¼ cup of water. Stir well, cover, and cook for 3 minutes.

  8. Add the bell pepper and cook for another 2 minutes.

  9. Add sugar, salt, and ground black pepper to taste. Stir to combine.

  10. Transfer to a serving bowl and enjoy with steamed rice.
