Ginisang Sayote with Chicken

Ginisang Sayote with Chicken is easy to make and budget-friendly, too. Flavored with tomatoes and oyster sauce, this vegetable dish is delicious as it is nutritious. Perfect with hot steamed rice paired with fried or grilled fish!

Ingredients

  • 1 tbsp canola oil
  • 1 onion, peeled and chopped
  • 2 clove garlic, peeled and minced
  • 1 lb boneless, skinless chicken thigh meat, cut into ½-inch pieces
  • 2 Roma tomatoes, chopped
  • 1 water
  • 2 tbsp oyster sauce
  • 4 sayote, peeled, cored, quartered and sliced on a bias
  • 0 salt and pepper to taste

Instructions

  1. Put large pan - medium heat and warm up some oil. Add onions and garlic and Cook it until softened.

  2. Add chicken and cook, stirring occasionally, until it gets lightly browned.

  3. Add tomatoes and Cook it until softened and release juices.

  4. Add water and heat until it comes to a boil. Lower heat, cover, and Keep cooking until chicken is cooked through and liquid is reduced to about 1 cup.

  5. Add oyster sauce and stir until well-dispersed.

  6. Add sayote and Cook it until tender yet crisp.

  7. Add salt and pepper to taste. Serve it while it's hot.

  8. Sayote has a sticky resin that can irritate the skin. Use gloves when peeling and cutting. Or slice off the top of the sayote and rub on the cut part in a circular motion for about 30 seconds. The transparent sap/liquid will turn into a white, foam-like consistency to remove the stickiness.

  9. It's best enjoyed tender yet crisp. Take it out of the heat before it's fully tender as it'll Keep cooking and soften in the residual heat.
