Ginisang Munggo at Sotanghon

Ginisang Munggo at Sotanghon is made delicious with cellophane noodles and minced shrimp. It's budget-friendly, hearty, and nutritious, served with steamed rice.

Ingredients

  • 1 cup dried munggo (mung beans) washed and drained
  • 2 quarts water
  • 1 tbsp oil
  • 1 medium onion peeled and chopped
  • 3 clove garlic peeled and minced
  • 1 large tomato chopped
  • 1 tbsp fish sauce
  • 0.5 lb shrimp peeled, deveined, and cut into ½-inch pieces
  • 2 oz sotanghon
  • 1 bunch fresh spinach, stems trimmed
  • 0 salt and pepper to taste

Instructions

  1. Warm up some oil in a pan or pot on medium heat.

  2. Sauté the garlic and onion. Add the soaked mung beans and ground pork.

  3. Add the aromatics — garlic, onion, ginger — and Cook it until fragrant.

  4. Add the beans, onion, garlic. Season it to taste.

  5. Cook it until everything gets tender and the flavors have melded together.

  6. Serve it while it's hot with steamed rice.
