Ginisang Gulay

Sauteed tomato, bitter, gourd, okra, squash, eggplant, and string beans

Ingredients

  • 1 medium bitter gourd (ampalaya, cored and sliced)
  • 8 piece okra
  • 1 cup sliced tomatoes
  • 8 piece string beans sliced in 2 inch pieces
  • 1 Chinese eggplant
  • 3.25 cup vegetable broth
  • 1 medium yellow onion (sliced)
  • 1.5 cup cubed calabaza squash
  • 4 clove garlic (crushed)
  • 0 salt and pepper to taste
  • 3 tbsp oil

Instructions

  1. Heat oil in a pan.

  2. Saute garlic and onion.

  3. Add the tomato when the onion gets soft. Cook for 2 minutes.

  4. Add the calabaza squash. Stir and cook for another 2 minutes.

  5. Put the eggplant, okra, string beans, and bitter gourd in the pan. Stir fry for 3 minutes.

  6. Pour the vegetable broth. Cover and cook for 5 to 7 minutes.

  7. Remove the cover. Add salt and pepper to taste.

  8. Transfer to a serving plate. Serve and enjoy!
