⏱ Prep: 0 min ⏱ Cook: 400 min

Ingredients

  • 0.5 cup soy sauce
  • 0.25 cup calamansi or lemon juice
  • 1 head garlic, peeled and minced
  • 1 tsp salt
  • 0.5 tsp pepper
  • 3 lb chicken legs or thighs
  • 0.5 cup flour
  • 0.5 cup corn starch
  • 1 tsp baking powder
  • 0 canola oil

Instructions

  1. Mix soy sauce, calamansi juice, garlic, ½ teaspoon of the salt and ¼ teaspoon of the pepper. Whisk until it's all mixed together.

  2. Drop in chicken and toss to fully coat. Marinate for 4 hours or overnight. Drain chicken from marinade and Pat them dry.

  3. In a shallow dish, combine flour, corn starch, baking powder, and the remaining ½ teaspoon salt and ¼ teaspoon pepper. Whisk well.

  4. Coat the chicken in the flour mixture so it's fully coat.

  5. In a wide, thick-bottomed pan on medium heat, heat about 2 inches deep of oil to 350 F.

  6. Add chicken in batches and cook, flipping on sides, until it turns golden, crisp, and cooked through.

  7. Remove from pan and drain on a wire rack. Serve while hot.

  8. Do not marinade for too long, as the high acidity in the calamansi will break down the muscle fibers and turn the meat from tender to mushy.

  9. For food safety, use a thermometer to gauge doneness accurately. Insert in the thickest part of the chicken; if it reads 165 F, the meat is cooked.
