Ensaladang Pakwan

Watermelon rind salad, Filipino pickle-style.

Ingredients

  • 2 cup Watermelon rind, julienned
  • 0.25 cup Vinegar
  • 2 tbsp Sugar
  • 1 pcs Onion, sliced
  • 1 pcs Tomatoes, chopped
  • 2 pcs Siling labuyo
  • 1 tbsp Oil

Instructions

  1. Julienned watermelon rind (peel green skin, keep white part).

  2. Mix vinegar, sugar, and oil for the dressing.

  3. Toss rind with onion, tomatoes, and chilies.

  4. Dress and serve as a side.
