Ilocano vegetable soup in coconut cream.

Ingredients

  • 1.33 cup Squash (kalabasa)
  • 0.67 cup String beans
  • 3.33 pcs Okra
  • 1.33 pcs Eggplant
  • 1.33 pcs Tomatoes, quartered
  • 1 cup Coconut cream
  • 2.67 pcs Fish (dilis or galunggong)
  • 2 pcs Garlic, minced
  • 0.67 tbsp Fish sauce

Instructions

  1. Sauté garlic until they soften and smell nice.

  2. Add coconut cream and water. Bring to simmer.

  3. Drop in squash and fish. Cook 15 minutes.

  4. Add string beans, okra, and eggplant. Season it with fish sauce. Cook 10 more minutes.
