Crispy Eggplant Fries

Easy fries made from eggplant.

Ingredients

  • 1 piece Chinese eggplant (sliced)
  • 1.5 cup all-purpose flour
  • 1.5 cup Panko breadcrumbs
  • 1 piece egg
  • 1.5 tsp salt
  • 1.5 cup oil
  • 1.25 cup mayonnaise
  • 3 tbsp banana ketchup
  • 1.5 tsp tabasco sauce
  • 0 Onion powder to taste
  • 0 Garlic powder to taste
  • 0 Salt to taste

Instructions

  1. Slice eggplant into thick strips. Place everything in a bowl.

  2. Crack eggs on a clean bowl. Whisk until smooth. Arrange flour and breadcrumbs on separate bowls each. Set aside.

  3. Heat oil in a cooking pot. Dredge a strip of eggplant in flour. Dip in beaten egg, and then roll over Panko breadcrumbs.

  4. Fry in medium heat until the color of the crumbs turns golden brown. Note: perform this step until all eggplant slices are consumed. Place on a clean plate lined with paper towel.

  5. Make the dipping sauce by combining all sauce ingredients. Mix well.

  6. Arrange talong fries on a serving plate and serve with dipping sauce.

  7. Serve as an appetizer. Share and enjoy!
