Creamy Tomato Spinach Pasta
Traditional Filipino creamy tomato spinach pasta recipe
Instructions
Cook the pasta in salted boiling water until al dente. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add the garlic and sauté for 30 seconds until fragrant.
Add the chopped tomatoes and cook for 5 minutes, stirring occasionally, until they break down into a saucy base.
Pour in the cream and stir until smooth. Bring to a gentle simmer and season with salt and pepper.
Add the fresh spinach and stir until it wilts, about 1–2 minutes.
Add the cooked pasta to the skillet and toss until every strand is coated in the creamy tomato sauce.
Finish with grated Parmesan cheese and serve hot.
