Spinach and Feta Pasta

Spinach and Feta Pasta — fresh vegetables prepared Filipino-style with garlic and shrimp paste. A light and flavorful side dish.

Ingredients

  • 1 large b penne pasta (cooked according to package instructions)
  • 3 tbsp extra virgin olive oil
  • 1 medium onion (chopped)
  • 2 clove garlic (minced)
  • 3 cup tomatoes (diced)
  • 1.5 cup fresh white mushrooms (sliced)
  • 2 cup spinach leaves (cleaned)
  • 170.1 g (6 oz) feta cheese (crumbled)
  • salt and pepper to taste

Instructions

  1. Pour the olive oil in a skillet or frying pan then apply heat.

  2. Sauté the garlic and onion.

  3. Add the tomatoes and cook for a minute.

  4. Put-in the mushroom, spinach, salt, and ground black pepper. Cook for 2 to 3 minutes.

  5. Add the pasta then stir for the sauce to coat.

  6. Put-in the feta cheese and cook for a minute more.

  7. Turn-off the heat and transfer to a serving plate.

  8. Serve with garlic bread on the side.
