Crispy Fried Smelt

fried smelt deep-fried until golden and crunchy — crispy on the outside, tender on the inside. Served with a tangy dipping sauce.

Ingredients

  • 1 large b. small smelt (cleaned (entrails, scales, and head removed))
  • 0.5 cup all-purpose flour
  • 0.25 cup cornstarch
  • 1 tbsp salt
  • 0.5 tsp ground black pepper
  • 1 cup oil

Instructions

  1. Rub salt and garlic powder all over the smelts. Let it stay for 10 minutes.

  2. Combine flour and cornstarch in a bowl. Mix well.

  3. Heat oil in a pan or cooking pot.

  4. Dredge the smelts in flour and cornstarch mixture.

  5. Fry in medium heat for 3 to 5 minutes or until it turns crispy.

  6. Remove from the pan and arrange in a plate lined with paper towel.

  7. Serve immediately.
