Asian Chicken Barbecue Submarine Sandwich

Marinated boneless chicken breast is grilled until smoky and charred with beautiful grill marks, then sliced and tucked into a soft submarine bun with fresh lettuce, creamy mayonnaise, and tangy Dijon mustard for a hearty sandwich.

Ingredients

  • 2 piece boneless chicken breast
  • 3 tbsp soy sauce
  • salt to taste
  • ground black pepper to taste
  • 1 tsp lemon juice
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 medium yellow onion (sliced)
  • 2 piece sub bread
  • 1.5 tbsp olive oil

Instructions

  1. In a large bowl, combine soy sauce, salt, pepper, and lemon juice. Stir.

  2. Put-in the chicken breasts and marinate for at least 3 hours.

  3. Grill chicken until each side is done. Slice into strips, and then set aside.

  4. Heat a pan and then put-in olive oil.

  5. Add the onion and cook in medium heat until caramelized. Set aside.

  6. Combine mayonnaise and Dijon mustard. Mix and spread a reasonable amount of mixture on each side of the sliced sub bread.

  7. Arrange sliced BBQ chicken and caramelized onion in the sub bread.

  8. Wrap or put in a plate.

  9. Serve.
