Coconut Rice

Ingredients

  • 0.25 cup desiccated coconut, unsweetened
  • 2 cup Jasmine rice
  • 1 can coconut milk
  • 1 cup water
  • 1 tsp salt
  • 0 green onions, chopped

Instructions

  1. In a pan on medium heat, add coconut flakes. Cook, stirring them around, for about 3 to 5 minutes or until golden at the edges and aromatic. Immediately remove from pan.

  2. Under running water, rinse the rice a few times until water runs clear. Drain it well.

  3. In a pot with a tight-fitting lid, combine rice, coconut milk, water, and salt. Stir gently to disperse.

  4. On medium heat, Get it boiling uncovered. Lower heat, cover, and Keep cooking for about 15 to 20 minutes or until rice is tender.

  5. Let sit, uncovered, for about 10 minutes.

  6. With a fork, gently fluff rice and Transfer it to a serving platter. Top with green onions and toasted coconut. Serve while hot.
