Chicken Kare-Kare

Chicken Kare-Kare is quick and easy to make and so hearty and tasty. Made of flavorful chicken, tender vegetables, and a thick peanut sauce, it's perfect with steamed rice!

Ingredients

  • 2 tbsp rice flour
  • 1 tbsp canola oil
  • 1 onion, peeled and sliced thinly
  • 3 clove garlic, peeled and minced
  • 3 lb chicken, cut into serving parts
  • 1 tbsp fish sauce
  • 1 tsp annatto powder
  • 3 cup water
  • 2 large eggplant, cut into chunks
  • 0.5 piece bundle long beans, ends trimmed and cut into 3-inch lengths
  • 1 bundle pechay, ends trimmed and leaves separated
  • 0.5 cup peanut butter
  • 0 salt and pepper to taste

Instructions

  1. Warm up some oil in a pan or pot on medium heat.

  2. Pan-fry chicken until it develops a nice crust. Set aside. in the pan.

  3. Add the aromatics — garlic, onion, ginger — and Cook it until fragrant.

  4. Add the onion, garlic, eggplant. Season it to taste.

  5. Cook it until everything gets tender and the flavors have melded together.

  6. Serve it while it's hot with steamed rice.
