Chicken Kare-Kare
Chicken Kare-Kare is quick and easy to make and so hearty and tasty. Made of flavorful chicken, tender vegetables, and a thick peanut sauce, it's perfect with steamed rice!
Instructions
Warm up some oil in a pan or pot on medium heat.
Pan-fry chicken until it develops a nice crust. Set aside. in the pan.
Add the aromatics — garlic, onion, ginger — and Cook it until fragrant.
Add the onion, garlic, eggplant. Season it to taste.
Cook it until everything gets tender and the flavors have melded together.
Serve it while it's hot with steamed rice.
