Chicken Caldereta

Ingredients

  • 1 (3 to 4 pounds) whole chicken, cut into serving parts
  • 0.5 cup pineapple juice
  • 0.25 cup soy sauce
  • 0 salt and pepper to taste
  • 0.25 cup canola oil
  • 2 medium potatoes, peeled and quartered
  • 1 large carrot, peeled and cut diagonally in a bias into ½-inch thick
  • 1 small green bell pepper, cored, seeded and cut into 2-inch cubes
  • 1 small red bell pepper, cored, seeded and cut into 2-inch cubes
  • 1 onion, peeled and chopped
  • 3 clove garlic, peeled and minced
  • 3 piece Thai chili peppers, stemmed and chopped
  • 2 cup tomato sauce
  • 1 water
  • 0.25 cup green olives
  • 0.5 cup liver spread
  • 0.5 cup Eden cheese or any quick melt cheese

Instructions

  1. Warm up some oil in a pan or pot on medium heat.

  2. Pan-fry chicken until it develops a nice crust. Set aside. in the pan.

  3. Add the aromatics — garlic, onion, ginger — and Cook it until fragrant.

  4. Add the pepper, potato, carrot. Season it to taste.

  5. Cook it until everything gets tender and the flavors have melded together.

  6. Serve it while it's hot with steamed rice.
