Chicken Bicol Express

Spicy coconut chicken from the Bicol region.

Ingredients

  • 333.33 g Chicken thighs
  • 1.33 cup Coconut cream
  • 6.67 pcs Bird's eye chilies
  • 1.33 tbsp Shrimp paste
  • 2.67 pcs Garlic, minced
  • 0.67 pcs Onion, sliced
  • 0.67 tbsp Fish sauce
  • 1.33 tbsp oil

Instructions

  1. Add garlic, onion and Cook it until they soften and get fragrant.

  2. Add coconut cream, bagoong, chilies, and fish sauce.

  3. Simmer 30 minutes until chicken is tender and oil separates.

  4. Serve with steamed rice.
