Chicken Adobo in Coconut Milk

Creamy coconut milk version of chicken adobo.

Ingredients

  • 0.67 kg Chicken thighs
  • 0.67 cup Coconut milk
  • 0.17 cup Soy sauce
  • 0.17 cup Vinegar
  • 4 pcs Garlic, minced
  • 2 pcs Bay leaves
  • 0.67 tsp Black peppercorns
  • 1.33 tbsp oil

Instructions

  1. Sauté garlic until they soften and smell nice.

  2. Add soy sauce, vinegar, bay leaves, and peppercorns.

  3. Pour coconut milk. Simmer for 30 minutes until chicken is tender.

  4. Reduce sauce slightly. Serve with steamed rice.
