Pro Tips

**Chef's Tips & Troubleshooting:**

- Marinate chicken for at least 1 hour in the refrigerator to let the flavors soak in.

- For fried chicken, let the coated pieces rest for 10 minutes before frying so the breading adheres better.

- For chicken adobo, let the meat rest in the marinade overnight for the best flavor penetration.

- Toss chicken wings in cornstarch before baking for an extra-crispy skin without deep frying.

Cooking Tips

For maximum flavor, season the chicken at least 30 minutes before cooking — ideally overnight in the refrigerator. This allows the marinade to penetrate beyond the surface. Use a meat thermometer to check doneness: 165°F (74°C) at the thickest part of the breast, away from the bone. Have all your ingredients prepped and measured before you start cooking — quick dishes leave no time for chopping mid-recipe.

Ingredient Substitutions

Chicken alternatives: Pork shoulder or boneless thigh meat can substitute for chicken in stews. For lighter fare, extra-firm tofu or seitan works in stir-fries and braises. Short on time? A pressure cooker (Instant Pot) can reduce cooking time by roughly half for most braised and stewed Filipino dishes. Reduce liquid slightly since less evaporates.

Storage & Reheating

Store in an airtight container in the refrigerator for up to 3–4 days. The flavors often deepen overnight, making leftovers even more delicious. Reheat on the stovetop over medium-low heat, adding a splash of water or broth if the sauce has thickened during storage. Microwave in 30-second bursts, stirring between each.

Cheesy Onion Rings

Cheesy Onion Rings

Metro Manila, International

Cheesy onion rings — thick onion rings coated in a cheesy batter and fried until golden. Crispy outside, sweet and tender inside.

Prep: 15 min Cook: 7 min Total: 22 min Medium Serves 4

Instructions

  1. Pair two slices of onion rings. One piece should be larger than the other and there should be a space in between the rings when the smaller piece is placed inside the larger one.
  2. Slice the mozzarella cheese in such a way that it fits the space in between the rings. Put the sliced cheese in between the two pieces of onions and secure by inserting a toothpick. Perform this step on all pairs of onion rings that you have.
  3. Heat oil in a deep cooking pot.
  4. Mix together all dry ingredient mixture in a bowl. Mix well. Dredge all onion rings onto the dry ingredient mixture. Place over a wire rack. Set aside.
  5. Combine milk and egg. Mix well. Pour the mixture into the bowl with the dry ingredients. Mix well until a better is formed.
  6. Dip the onion rings in the batter mixture. Put it back over the wire rack for the excess batter to drip.
  7. Coat with Panko breadcrumbs.
  8. Fry one side until it turns golden brown. Turn it over and do the same thing on the opposite side.
  9. Serve warm with marinara sauce.
