Buko Pandan Drink

Buko Pandan Drink with pandan gelatin and shredded young coconut in creamy coconut juice is refreshing and delicious. This tropical drink is sure to be a crowd-pleaser!

Ingredients

  • 1 can coconut milk
  • 4 cup coconut juice
  • 396.9 g (14 oz) condensed milk
  • 2 cup young coconut, shredded
  • ice cubes to taste
  • 19.8 g (0.7 oz) agar agar bars
  • 3 cup young coconut juice
  • 1 cup sugar
  • 3 drops pandan extract

Instructions

  1. In a large pitcher, combine coconut milk, coconut juice, and condensed milk. Stir until well-blended.

  2. Add in young coconut strips and gulaman cubes.

  3. Chill for about 1 to 2 hours. Serve in glasses over ice.

  4. In a large pot, soak agar-agar in coconut juice for about 30 to 40 minutes.

  5. Get it boiling on medium heat and cook, stirring them around, until agar-agar melts.

  6. Add in sugar and stir to dissolve. Keep cooking for about 10 to 15 minutes or until agar-agar is completely dissolved.

  7. Add in pandan extract and stir to combine.

  8. Take it off the heat. Pour into a flat dish and allow to cool in the refrigerator for about 30 minutes or until agar-agar is set and hardened.

  9. Cut into ½-inch cubes.

  10. Use coconut juice instead of water to soak and cook the gulaman for more buko flavor.

  11. Shred the gulaman bars finely and soak for at least 30 minutes so they'll dissolve quickly when cooked.
