Broken Lasagna

Broken lasagna cooked in a rich tomato and beef sauce, finished with ricotta, mozzarella, parmesan, and sharp cheddar, and topped with fresh basil.

Ingredients

  • 8 oz lasagna (broken into pieces)
  • 1 large b ground beef
  • 5 piece tomatoes (whole)
  • 3 tbsp tomato paste
  • 1.5 cup ricotta cheese
  • 1.5 cup sharp cheddar (grated)
  • 6 tbsp parmesan cheese (grated)
  • 3.25 cup mozzarella (shredded)
  • 8 piece fresh basil (chopped)
  • 1 medium yellow onion (minced)
  • 3 clove garlic (minced)
  • 4 cup beef broth
  • 1.25 tsp ground black pepper
  • 3 tbsp olive oil

Instructions

  1. Heat olive oil in a large pan. Arrange the whole tomatoes around the pan.

  2. Add the ground beef in the center and sauté gently without disturbing the tomatoes until the beef browns.

  3. Add the garlic and onion. Sauté for about 2 minutes.

  4. Peel off the tomato skins, mash the tomatoes, and stir well with the beef mixture.

  5. Add tomato paste and pour in beef broth. Stir and simmer for 20 minutes.

  6. Add the broken lasagna pieces. Stir occasionally and cook until al dente according to package directions.

  7. Season with ground black pepper and mix in the chopped fresh basil.

  8. Stir in ricotta, sharp cheddar, parmesan, and mozzarella. Gently mix until the cheeses melt and the sauce becomes creamy.

  9. Transfer to a serving bowl. Serve warm with garlic bread.
