Beef Broccoli

This beef broccoli is a delicious combination of protein-rich sirloin and nutritious greens combined with a homemade stir-fry sauce. It's easy to make and the perfect addition to an Asian theme meal!

Ingredients

  • 0.25 kg (1 lb) beef sirloin, sliced thin and cut into strips
  • 0.5 egg white
  • 0.5 tbsp cornstarch
  • 0.5 tbsp Chinese cooking wine
  • 0.25 tsp salt
  • oil, as needed for cooking
  • 1 head broccoli, cut into florets
  • water as needed
  • 0.5 onion, peeled and sliced thinly
  • 1.5 clove garlic, peeled and minced
  • 0.5 thumb-sized ginger, peeled and grated or finely minced
  • 0.25 cup poaching liquid, reserved from parboiling broccoli
  • oyster sauce to taste
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 0.5 tbsp brown sugar

Instructions

  1. Warm up oil in a large pot over medium-high heat. Sear meat until golden, then set aside.

  2. In the same pot, pour in the vinegar and let it boil uncovered for 2 to 3 minutes.

  3. Return the meat to the pot, add soy sauce, garlic, bay leaves, and peppercorns.

  4. Cover and simmer on low heat until the meat is tender, about 30 to 45 minutes.

  5. Uncover and Cook it until the sauce reduces to your preferred thickness. Serve it while it's hot.
