Baked Garlic Rosemary Chicken

Chicken baked in the oven until golden and tender. A hands-off Filipino preparation with rich, developed flavors.

Ingredients

  • 0.7 kg (1.5 lbs) chicken (cut into serving pieces)
  • 1 large b. red potatoes
  • 2 tbsp chopped fresh Rosemary
  • 2 tbsp minced garlic
  • 2 piece lemon
  • 3 tbsp olive oil
  • water as needed
  • 2 tsp salt
  • 1.25 tsp ground black pepper
  • 1 tsp garlic powder

Instructions

  1. Boil the potatoes for 8 minutes. Remove from the pot and let cool.

  2. Slice the potatoes into quarters. Sprinkle some garlic powder and then set aside.

  3. In a bowl, combine garlic, rosemary, 1 tablespoon olive oil, juice of 2 lemons, salt, and ground black pepper. Mix well.

  4. Combine the rosemary mixture with the chicken. Make sure that the chicken is coated with the mixture equally. Marinate for 30 minutes.

  5. Heat a frying pan and then pour-in remaining olive oil.

  6. Pan-fry each side of the chicken for 4 to 6 minutes.

  7. Preheat oven to 425 degrees Fahrenheit.

  8. Arrange chicken and potatoes in an oven-proof tray.

  9. Bake for 30 to 40 minutes.

  10. Remove from the oven, and then serve.
