Arroz Caldo

Filipino chicken rice porridge with ginger, garlic, and scallions.

Ingredients

  • 333.33 g Chicken thighs, diced
  • 0.67 cup Jasmine rice
  • 1.33 inch Ginger, sliced
  • 3.33 pcs Garlic, minced
  • 0.67 pcs Onion, chopped
  • 4 cup Chicken stock
  • 0.33 cup Scallions
  • 0.67 tsp Salt and pepper
  • 1.33 tbsp Fried garlic
  • 2.67 pcs Calamansi

Instructions

  1. Sauté garlic, ginger until they soften and smell nice.

  2. Add rice and stir for 2 minutes. Pour in chicken stock.

  3. Simmer for 35 minutes, stirring occasionally, until rice breaks down.

  4. Add salt and pepper. Garnish with scallions, fried garlic, and calamansi.
