Adobong Puti

Adobong Puti is made of pork belly stewed in vinegar, salt, and spices. This white adobo is hearty, full of flavor, and pairs well with steamed rice.

Ingredients

  • 3 cup 1 cup vinegar
  • 3 1 ½ cups water
  • 3 tablespoon 1 tablespoon salt
  • 9 3 bay leaves
  • 3 teaspoon 1 teaspoon peppercorns cracked
  • 3 teaspoon 1 teaspoon sugar

  • 0 In a wide, heavy-bottomed pan over medium heat, heat oil. Add onions and garlic and cook, stirring regularly, until softened.

  2. Add pork and cook until lightly browned.

  3. Add vinegar and bring to a boil, uncovered and without stirring, for about 3 to 5 minutes.

  4. Add water, salt, bay leaves, and peppercorns. Stir to combine. Continue to boil for about 3 to 5 minutes.

  5. Lower heat, cover, and continue to cook for about 40 to 50 minutes or until meat is fork-tender and liquid is reduced.

  6. Add sugar and stir. Continue to cook, uncovered, until mixture begins to render fat.

  7. Sprinkle with fried garlic bits as desired and serve hot.
