Adobo
The national dish of the Philippines — chicken and pork braised in soy sauce, vinegar, garlic, bay leaves, and black pepper. Tender, savory, and comforting.
Instructions
Heat oil in a pan. Sear chicken and pork for 3 minutes per side until golden. Remove and set aside.
In the same pan, marinate the seared meat with soy sauce, vinegar, garlic, bay leaves, and peppercorns. Let sit for 5 minutes.
Pour in water. Bring to a boil over medium-high heat, then reduce to low. Cover and simmer for 40 minutes.
Uncover and simmer for another 10 minutes until the sauce thickens. Serve hot over steamed rice.
