Adobo

The national dish of the Philippines — chicken and pork braised in soy sauce, vinegar, garlic, bay leaves, and black pepper. Tender, savory, and comforting.

Ingredients

  • 300 g Chicken, quartered
  • 300 g Pork belly, cut into pieces
  • 1.8 tbsp Soy sauce
  • 1.8 tbsp Vinegar
  • 2.4 pcs Garlic, minced
  • 1.8 pcs Bay leaves
  • 0.6 tsp Black peppercorns
  • 1.2 tbsp Coconut cooking oil
  • 0.6 cups Water

Instructions

  1. Heat oil in a pan. Sear chicken and pork for 3 minutes per side until golden. Remove and set aside.

  2. In the same pan, marinate the seared meat with soy sauce, vinegar, garlic, bay leaves, and peppercorns. Let sit for 5 minutes.

  3. Pour in water. Bring to a boil over medium-high heat, then reduce to low. Cover and simmer for 40 minutes.

  4. Uncover and simmer for another 10 minutes until the sauce thickens. Serve hot over steamed rice.
