Upo Guisado

Upo Guisado

This is a recipe for upo guisado or sauteed bottle gourd with pork.

Ingredients

  • 1 small bottle gourd (upo, sliced)
  • 6 oz pork belly (sliced into small pieces)
  • 1 medium plum tomato (cubed)
  • 1 medium yellow onion (chopped)
  • 4 clove garlic (crushed)
  • 0.25 tsp ground black pepper
  • 3 tbsp oil
  • 1.5 cup water

Instructions

  1. Heat oil in a pan

  2. Sauté garlic, onion, and tomato

  3. Add the pork. Cook for 3 minutes

  4. Pour 1 cup water. Let boil. Adjust the heat to medium and then continue to cook until the liquid completely evaporates

  5. Add the sliced upo. Stir and then cook for 5 minutes.

  6. Season with ground black pepper and fish sauce.

  7. Add water. Cook for 2 minutes.

  8. Transfer to a serving bowl. Serve.
