Spicy Pork Ribs Adobo
Filipino spicy pork ribs adobo recipe
Instructions
Pat the pork ribs dry and season with a pinch of salt. Heat oil in a large pot over medium-high heat and sear the ribs on all sides until browned.
Pour in the soy sauce, vinegar, and water. Add the whole garlic cloves, bay leaves, black peppercorns, and sliced chili peppers.
Bring to a boil, then reduce heat to low. Cover and simmer for 30 minutes.
Add the brown sugar and stir to dissolve. Cover and continue simmering for 25 minutes until the pork ribs are fork-tender.
Remove the bay leaves and chili peppers. Increase heat and boil for 5 minutes to reduce the sauce until it thickens to a glaze.
Serve the ribs with the thickened sauce spooned over the top, accompanied by steamed rice.
