Sinigang na Baka

A comforting Filipino beef soup simmered in a tangy tamarind broth with tender cuts of beef and fresh vegetables.

Ingredients

  • 4 large bs. beef neck bones
  • 50 g rams Maggi Magic Sinigang sa Sampaloc
  • 15 piece string beans (cut into 2-inch pieces)
  • 5 piece taro root (peeled)
  • 2 piece Chinese eggplant (sliced diagonally)
  • 3 piece long green pepper
  • 10 piece okra
  • 1 piece daikon radish (roll cut)
  • 4 piece plum tomatoes (wedged)
  • 3 clove garlic (minced)
  • 3 piece onions (wedged)
  • 1 quart rice water
  • 1 quart water
  • 1 bunch water spinach (leaves separated from the stalk)
  • 1 tbsp beef powder
  • 3 tbsp oil
  • 0 Fish sauce to taste

Instructions

  1. Sauté garlic, onions, and half the number of tomatoes until the onions soften.

  2. Add the beef and then continue to sauté until it browns.

  3. Pour the rice water. Cover the pot and let the liquid boil. Simmer until the beef tenderizes completely. Add water as needed. Note: Scrape off the scums using a fat skimmer spoon.

  4. Add Maggi Magic Sinigang sa Sampaloc Mix and beef powder. Stir.

  5. Add the taro root and daikon radish. Cover and continue cooking until the taro softens.

  6. Put the eggplant, remaining tomatoes, and long green peppers into the cooking pot. Continue cooking for 5 minutes.

  7. Season with fish sauce.

  8. Add the okra and string beans. Continue cooking for another 5 minutes.

  9. Add the water spinach.

  10. Cook for 1 minute.

  11. Transfer to a serving bowl. Serve hot with rice.
