Braised pork ribs with sweet potato.

Ingredients

  • 3 large bs. pork ribs
  • 1 piece sweet potato (cubed)
  • 5 clove garlic (chopped)
  • 1 piece onion (chopped)
  • 1 piece tomato (chopped)
  • 1.5 tbsp fish sauce
  • 1.5 cup soy sauce
  • 1 cup pineapple juice
  • 1.25 cup banana ketchup
  • 1.5 cup water
  • 1.5 tsp whole peppercorn (cracked)
  • 1.5 cup oil

Instructions

  1. Prepare the ribs by removing the membrane and slicing it into serving pieces.

  2. Combine the marinade ingredients along with the ribs in a big bowl. Start with the ground black pepper, fish sauce, soy sauce, and pineapple juice. Mix well. Marinate for at least 3 hours. Note: the longer the better.

  3. Heat oil in a pan. Fry the sweet potato until it turns light brown. Remove and set aside.

  4. Using the remaining oil, pan-fry ribs for 3 minutes per side. Remove from the pan. Set aside.

  5. Saute onion using remaining oil. Add garlic and tomato. Cook until onion softens.

  6. Pour-in remaining rib marinade ingredients. Let it boil.

  7. Add ribs back into the bowl. Pour water. Let boil.

  8. Add banana ketchup. Stir and cover the pan. Continue cooking in low heat for 1 to 1 ½ hours or until the meat gets tender.

  9. Add the sweet potato back in the pan. Cook for 3 minutes.

  10. Transfer to a serving plate. Serve with warm rice.
