Pork Menudo with Ham

Ham stew in a bright red tomato and annatto sauce with potatoes, hotdogs, and green peas. A colorful Filipino comfort dish.

Ingredients

  • 170.1 g (6 oz) pork (sliced into small cubes)
  • 141.7 g (5 oz) ham (cubed)
  • 1 small potato (cubed)
  • 1 small carrot (cubed)
  • 1 small red bell pepper (chopped)
  • 1 small green bell pepper (chopped)
  • 28.3 g (1 oz) raisins
  • 1 small onion (chopped)
  • 4 clove garlic (crushed)
  • 226.8 g (8 oz) can tomato sauce
  • 1.5 cup beef broth (or 1 1/2 cup water with 1 piece beef cube)
  • 3 tbsp oil

Instructions

  1. Heat oil in a pot.

  2. Sauté garlic and onion

  3. Once the onion gets soft, add the pork. Cook until light brown.

  4. Add the ham. Cook for 2 minutes.

  5. Add the tomato sauce and beef broth. Let boil.

  6. Mix in the raisins. Cover and cook between low to medium heat until the pork gets tender.

  7. Add potato, carrot, and bell pepper. Cook for 5 to 8 minutes.

  8. Add salt and ground black pepper. Stir. Cook for 2 to 3 minutes.

  9. Transfer to a serving plate. Serve with rice.
