Pork Ginataan

This is a recipe for Pork Ginataan.

Ingredients

  • 1.5 lb Pork belly (cut into cubes)
  • 1 bunch fresh spinach
  • 2 cup coconut milk (gata)
  • 2 cup coconut cream (kakang gata)
  • 12 piece Thai chili pepper
  • 1 medium yellow onion (chopped)
  • 3 clove garlic (crushed and chopped)
  • 2 thumbs ginger (sliced into thin strips)
  • 3 tbsp oil
  • 0.25 tsp ground black pepper
  • 3 tbsp fish sauce (patis)

Instructions

  1. Heat oil in a cooking pot.

  2. Saute, onion, garlic, and ginger.

  3. Once the onion becomes translucent and soft, add pork. Saute until light brown.

  4. Pour coconut milk and coconut cream. Let boil.

  5. Add chili pepper (Thai chili). Cover the cooking pot. Cook for 45 to 60 minutes, or until the pork becomes tender.

  6. Add spinach. Cover and cook for 2 minutes.

  7. Season with ground black pepper and fish sauce.

  8. Transfer to a serving plate. Serve.
