Pork Adobo with Tokwa and Tausi and Garlic Fried Rice Adobo

Filipino pork adobo with salted black beans and fried tofu and a side of garlic fried rice with adobo sauce.

Ingredients

  • 1.5 lb pork (cubed)
  • 2 piece tofu (cubed and fried)
  • 1 tsp brown sugar
  • 10 clove garlic (crushed)
  • 3 tbsp salted black beans
  • 4 piece dried bay leaves
  • 1 tsp whole peppercorn
  • 5 tbsp soy sauce
  • 4 tbsp vinegar
  • 1.5 cup water
  • 5 tbsp oil
  • 3 cup leftover rice
  • 1 tsp salt
  • 3 tbsp garlic oil
  • 1.5 tbsp toasted garlic
  • 3 tbsp adobo sauce

Instructions

  1. Prepare the toasted garlic by heating oil in a pan. Add crushed garlic while oil is heating up. Cook in low heat until garlic turns golden brown. Set aside. Note: the oil used to cook the garlic turns to garlic oil.

  2. Heat half of the garlic oil in a pan. Saute pork until light brown.

  3. Pour soy sauce and vinegar. Let boil.

  4. Add salted black beans and water. Cover and cook for 40 minutes or until pork gets tender.

  5. Add fried tofu and sugar. Stir and cook for 3 minutes. Transfer to a serving plate.

  6. Prepare the fried rice by combining salt and rice. Mix gently.

  7. Heat the remaining toasted garlic and oil in a pan. Add rice. Pour-in adobo sauce. Stir-fry for 3 to 5 minutes.

  8. Serve with pork adobo. Enjoy!
